BADAM HALWA

A bowl of piping hot badam halwa in my hands and I am in tranquility. Packed with goodness of almonds and milk gives a pretty scrumptious sweet delish. With the right amount of sweetness to it, trust me, one can gobble it in seconds.

Well, I have a small story to share it with you all. To start with, honestly, I hadn't tasted badam halwa until I got married. My mil (mom in law) prepared it on certain occasion. Believe it or not, it was super hit. I just digged right into it till the bowl was super clean 😂. From then on, I became like, husband's birthday, let's make badam halwa, fil's (father in law) birthday, let's make badam halwa. Somebody xyz's birthday, yes, badam halwa. That's how I became crazy fan of badam halwa.

Recipe
Ready in 1 hr 30 min
Serves 5 people
Ingredients:
Almonds - 85g or 1/2 cup
Water - 1 cup
Milk - 0.75 Ltr + 3 tbsp
Sugar - 130g or 1/2 cup + 2 tbsp
Ghee - 1 tbsp + 1 tsp
Saffron strands - 3-4
Method:
In a saucepan, heat water until it reaches rolling boil.
Take it off flame and add in the almonds to hot water. Set it aside for about 25-30 min or until almond's skin can be peeled off easily.
Peel off the skin and grind the soaked almonds with 3 tbsp of milk into smooth paste. (Not coarse please). Adjust the milk quantity if needed.
In a non stick wide pan, heat 1 tbsp of ghee and add in the almond paste. In low-med flame, saute it for about 2-3 min. It should slightly change its colour from white to very light golden brown.
Pour in the milk and add in saffron strands.
Keep stirring the whole mixture almost continuously in med-high flame.
Once it starts to thicken, reduce the flame as it will start splashing. Be cautious about this stage and handle carefully with a lid.
After few min, mixture comes together and is thickened nicely. Add in the sugar and give it a good mix until sugar is dissolved.
Add 1 tsp of ghee and mix it thoroughly. Now take it off flame and serve as is or add ghee tempered dry fruits.
