CREAM CHEESE BISCUITS

I am in love with cream cheese, be it in cakes, cookies, biscuits or anything. Texture and taste that cream cheese adds to any dish is irreplaceable.
Ideally, I would suggest to use cream cheese wherever you'd expect soft texture. On contrary, here I have used cream cheese to make these yummy crunchy biscuits.
In my previous post, I had shared carrot cake with cream cheese frosting. So had a jar of leftover frosting. To make better use of that, whipped that into a biscuit dough and then made delicious biscuits.
These biscuits can be paired with your evening tea/coffee/milk or with a bowl of your favourite fruits or just as is.

Method:
Thaw cream cheese frosting on kitchen counter if you are using leftover frosting just like me.
I have used bigger bolder baking recipe for cream cheese frosting. You can use any cream cheese frosting recipe to make these buttery biscuits.
In a mixing bowl, add room temperature butter and light/dark brown sugar. I have used light brown sugar here.
Using hand mixer, beat butter and sugar in med-high speed to get smooth and fluffy mixture. You can use hand whisk also but it will take some extra time.
Scrape down the sides of the bowl in between and it should be ready in 3-4 min.
Once the mixture is light and fluffy, add in vanilla essence or extract, salt and whole wheat flour. Gently mix with spatula until well combined.
It should be of a cookie dough consistency. If it's too dry, feel free to add 1 or 2 tbsp of milk.
Fold in chocolate sprinkles into dough.
Portion them into small balls and press them into biscuit thickness. You need not be very conscious about size and shape. I like it with the rustic look. You can also roll out the dough into a 1/2 inch thickness sheet and use cookie cutter to get even shape. Top it with chocolate sprinkles or any toppings of your choice.
Line them on a parchment paper on cookie sheet or baking tray and bake them in a preheated oven at 170 deg for about 20 min or until the sides of biscuits is nicely browned.

Serves 32-35 biscuits

Ingredients:
Cream cheese frosting - 240g
Butter - 85g
Brown sugar - 70g
Whole wheat Flour - 160g or 1 and 1/4 cup
Salt - 1/4 tsp
Chocolates sprinkles - 1 tbsp (dough) + 1 tbsp (topping)
Milk - 2 tbsp if required
In a mixing bowl, beat butter and brown sugar until light and fluffy. Should take 3-4 min.
Add in vanilla essence, salt and flour and gently mix until well combined.
Add in milk if the dough is too dry.
Fold in some chocolate sprinkles or choco chips or any toppings of your choice.
Roll the dough in between parchment papers and cut them using cookie cutter. Top them with little more sprinkles or choco chips.
Line them on a parchment paper and bake them in a preheated oven at 170 deg for about 20 min or until the sides of biscuits is nicely browned.
